4 ounces sage leaves (do not rinse)
3 cups Lucini® Premium Select Extra Virgin Olive Oil®
2 cups self-rising flour
1 1/2 cups sparkling water
In pot heat Lucini® Premium Select Extra Virgin Olive Oil® to 375 degrees.
In bowl mix together self-rising flour and sparkling water. Do not over beat.
Dip sage leaves in batter.
Cook a few leaves at a time in pre-heated extra virgin olive oil approximately 2 minutes until golden and rise to surface.
Drain on platter lined with paper toweling.
Serve with tomatillo sauce.
