Anchovy Meyer Lemon Aioli

2 large egg yolks
1 teaspoon Dijon mustard
1 large clove garlic, minced
1 anchovy fillet, finely minced (optional)
1/2 cup Lucini® Extra Virgin Olive Oil
Zest and juice of 1 meyer lemon
Freshly ground black pepper


In a medium bowl, whisk the egg yolks with the mustard, garlic and anchovy. Slowly drizzle in the olive oil, whisking constantly, until a thick mayonnaise forms. Whisk in the lemon zest, juice and black pepper. Taste and adjust salt if necessary. Serve with artichokes.

Tips & Notes~
If you do not like anchovy you can just add a bit of salt instead. This works as a base for a variety of different flavored aiolis. You can add fresh herbs, some curry powder or hot sauce to make it spicy. Use some chopped roasted garlic in place of the fresh or some minced shallot or green onion to give it some bite.
