Mashed Sweet Potatoes

5 cups sweet potatoes, peeled and diced
¼ cup Lucini® Extra Virgin Olive Oil
2/3 cup Lucini® Fig & Walnut Savory Balsamic
Heavy pinch red chili flakes
Salt and black pepper


Place the potatoes in sauce pan, cover with water and cook over high heat until tender. Drain and place back into the sauce pan. Add the olive oil, dressing, and chili flakes and mash well. Season the potatoes with salt and pepper and mix well. Serve warm.
