1 cup Lucini® Premium Select Extra Virgin Olive Oil®
6 cloves garlic, finely chopped
5 sprigs fresh Rosemary, leaves removed and chopped
5 sprigs fresh Thyme, leaves removed and chopped
1 Meyer lemon, quartered
1 3-4 lb chicken, butterflied
Salt and Black Pepper
To prepare the marinade, mix the first four ingredients in a small bowl. Rub the marinade into both sides of the chicken, cover and refrigerate for 30 mins to 24 hours.
Heat grill to medium-low heat. Remove chicken from marinade, sprinkle with fresh lemon juice and season generously with salt and black pepper. Place the chicken skin side down directly on the grill and cover with two foil-covered bricks. Once the skin is brown and crispy, approximately 15 minutes, remove the bricks and flip the chicken. Cover again with bricks and continue cooking until the chicken is cooked throughout, approximately 10 minutes.
Let rest for ten minutes and then serve.
