Sundried Tomato Cinque é Cinque Foldovers

1 pouch (250g) Lucini® Traditional Cinque e Cinque
3/4 cup + 3 tbsp Lucini® Premium Select Extra Virgin Olive Oil®
3 cups water
2 tsp kosher salt
4 large, thick slices of fresh mozzarella
1 large tomato, sliced into 6 pieces
2 cups sun-dried tomatoes packed in oil, drained
1/2 cup freshly grated Parmesan cheese
1/4 cup packed fresh basil leaves
1/4 cup packed fresh parsley leaves
1/4 cup pine nuts
2 gloves garlic, crushed under a knife and peeled
Fresh ground pepper, to taste
Heat oven to 500 ˚F. Prepare the Cinque é Cinque mix according to the directions on the package, allowing the frittata to reach a golden brown color and crispy top. Remove from the oven and let rest until cool.
In a food processor fitted with the metal blade, combine the last 7 ingredients and 1/2 cup extra virgin olive oil. Blend until the mixture forms a coarse paste, adding the remaining 1/4 cup extra virgin olive oil as the pesto is processing; add more oil if you desire a thinner paste.
Using a pizza wheel, cut the frittata in half. Spread the pesto mixture over half of each piece. Then top with two pieces of mozzarella and three slices of tomato. Fold the blank side of each half over.
Broil for 3 minutes, or until cheese begins to melt and remove from oven. Cut into 6 pieces total. Serve immediately.
