Roasted Beets with Cherry and Rosemary

3-4 large red beets, with ends removed
3-4 large yellow beets, with ends removed
Kosher salt and freshly ground pepper
Lucini™ Cherry Balsamic and Rosemary Vinaigrette
Peel outer flesh from beets. Slice into 1/4-1/3 inch thick slices. Lay in a single layer on a greased sheet pan. Season both sides of beets lightly with kosher salt and pepper.
Allow beets to rest while oven preheats to 425 degrees F. When oven has heated, place beets in a bowl, and pour 3 tablespoons of Lucini™ Cherry Balsamic & Rosemary Artisan Vinaigrette over seasoned beets. Toss until evenly coated.
Return to sheet, in single layer. Place in oven for 35 minutes, turning half way through.
Enjoy with a warm slice of soft goat cheese, or chill and enjoy on top of arugula with spiced walnuts.
