1 medium-large celery root, outer rind peeled off; shredded
3 carrots, peeled and grated (remove excess liquid)
1 small head napa cabbage, shredded
1/2 small head purple cabbage, shredded
2-3 chicken breasts, cooked, chilled and shredded
2-3 scallions, sliced into 1/4 inch pieces, on the bias
1/8 cup toasted almond slices
Lucini® Delicate Cucumber and Shallot Artisan Vinaigrette
Combine all ingredients in large salad bowl. Mix until lightly coated with the vinaigrette.
Allow to rest in fridge for 2-3 hours. Toss each hour or so, add more dressing as needed. Serve.
